Carrot Cake Oatmeal Pancake

Recipe

Good pancakes, Good health. Good deal. 

Ingredients: 

1 1/4 cups old-fashioned oats 

1/4 cup of ground flax seeds

1 cup of dairy or non dairy milk

1 egg, beaten

1/2 teaspoon baking powder 

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg 

1/4 teaspoon salt 

1 tsp vanilla 

Butter or oil for griddle or stovetop 

1/2 cups of grated or diced carrots

Optional toppings: maple syrup butter, extra carrots (toasted), chopped nuts, raisins

Made  2 servings (3-4 small pancakes each)

Nutritional Profile:  

Vitamin A, C, K.  Minerals iron, calcium, and potassium. 

Antioxidants. 

Fiber, Carbohydrates., omega-3s
