I love finding good nutritional recipes that use a twist on a traditional dish.
I especially love a recipe that I can use my Vitamix to blend.
This Carrot Cake Oatmeal Pancakes recipe ticks both boxes!
Marisa Moore, an Atlanta-based registered dietitian nutritionist, developed this recipe and shared it in Costco's For Your Table spotlight.
I used my awesome Vitamix blender, still going strong after all these years, to blend oats to create the oat flour called for in this recipe. I also used the blender to mix the entire recipe to make it even easier with less cleaning up. Super yay!

This recipe calls for raw diced carrots. If you are not a fan of raw carrots, then steam or cook carrots before using in this recipe and toss lightly with oat flour before adding to mixture. This will help absorb excess water and prevent soupy pancakes.
Carrot Cake Oatmeal Pancakes (see video for my modifications)
Makes apx 2 servings of 3-4 small pancakes each.
Ingredients
1-1/2 cups old-fashioned oats
1 cup milk (dairy or nondairy) ( I used almond milk)
1 slightly beaten egg
1/2 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon ginger
1/4 teaspoon nutmeg
1/4 teaspoon salt
1 teaspoon vanilla
Butter or oil for the griddle (I used my stovetop and avocado oil)
Maple syrup, butter, extra carrots and chopped nuts, for topping (optional)
Instructions: Modified from original recipe
Use Vitamix to blend oat into flour.
Combine all ingredients into the Vitamix and blend.
Allow to sit for 5-10 minutes.
Select medium to medium-high heat for preheating options.
Once skillet or griddle is heated, spray or butter pan.
Drop approximately 1/4 cup of batter into a small round.
Sprinkle evenly with shaved (grated or finely diced) carrots.
Cook side of pancake until small bubbles form on top.
Then, flip the pancake and cook other side until firm and no raw batter remains.
Serve warm with topping of choice.
